Suzy's Pumpkin Loaf Cake with Chocolate Chips

Suzy's Pumpkin Loaf Cake
Last week, my friend Suzy gave me a cute little pumpkin loaf that I included as part of our family dinner here .  Since several people asked for the recipe (it is really good pumpkin cake), I thought it would be fun to share another of Suzy's special recipes.

The standard recipe makes one 9-inch loaf or 3 mini loaves.  The recipe is easy to double.

1 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1/4 tsp ground cloves
8 tbsp (1 stick) of unsalted butter
1 cup sugar
2 large eggs
1 tsp vanilla
3/4 cup solid pack, canned pumpkin
3/4 cup semisweet chocolate chips
1/2 cup chopped nuts

Preheat oven to 350F and lightly grease a 9 inch loaf pan or 3 mini loaves.

In a large bowl, sift flour, soda, salt and spices

In bowl of an electric mixer, cream butter and sugar on medium speed until light and fluffy.  Add eggs on at a time, incorporating each one thoroughly.  Add vanilla and scrape inside of the bowl.

Alternately add 1/3 of the dry ingredients and 1/2 of the pumpkin, mixing briefly after each addition. 

Fold in chocolate and walnuts.

Bake for 50-60 minutes, or until a toothpick inserted into center of th eloaf comes out clean.

Transfer loaf to a wire rack and cool for 15 minutes.  Invert pan to release the loaf, then place loaf right side up and cool completely before slicing.

Makes 1 loaf, serves 8.  Each serving is 350 calories, 18 grams of fat, 45 grams of carbs, 5 grams protein, and 3 grams fibers.  10 pointsplus per slice.
