Treats from Friends and Left-overs

Breakfast "scramble" over kale salad

Tonight's dinner is brought to you by Suzy and Elmer.  Suzy recently did her first guest post here   showcasing a fabulous maple pecan pie.  She had so much fun with her post that she brought me a family-sized dinner loaf of pumpkin chocolate chip bread today.

Elmer is from the Scream 4 Tree fame!  Elmer is also my "connection" to our locally grown turkeys, pork, and lamb.  He knows my boys are anxiously awaiting our next pig so he brought in some left over breakfast sausage from last year's pig that we split, to tied the boys over until the next pig. 

Along with left over waffle fries, kale salad, and eggs, these special ingredients turned into a wonderful meal.

Pork breakfast sausage, waffle fries, and kale salad
1.  In a large frying pan, cook sausage over medium heat, breaking up large chunks.
2.  Stir eggs in a bowl.
3.  Chop cooked potatoes or french fries into bite sized pieces.
4.  When sausage is cooked, leave enough in the pan to serve your family, and add the potatoes/fries.  Stir to heat and crisp up the potatoes.  I'm saving a bit of sausage for tomorrow's pizza.
5.  Pour the eggs over the sausage and potato mixture and add a bit of cheese.  I used some shredded cheddar cheese.
6.  Flip the mixture over every few minutes to cook the eggs all the way through.  I had hoped for a large frittata sort of thing but the clump fell apart so it turned into more a scramble.

Serve with salad or toast, if desired.  Maybe another sprinkle of cheese and some salt and pepper (and hot sauce!).
