Whole Wheat Fresh Ginger Cake

This recipe from the Vitamix was fantastic - a moist richly flavored ginger cake.  I made a few modifications to the recipe because I'm a bit lazy but it's all good.
Whole Wheat Fresh Ginger Cake
Grind enough wheat kernals for 1 1/2 cups/180 grams of wheat flour.  Dump in a medium sized bowl and add 1 tsp of cinnamon, 1/2 tsp of baking powder, 1/2 tsp of baking soda and 1/2 tsp of salt.

In the Vitamix, add and blend for a minute: 1/2 cup water, 2 egg whites, 1/4 cup molasses, 1/4 cup brown sugar, 1 apple quartered, 1/2-inch piece of fresh ginger unpeeled.

Pour wet mixture into dry mixture and blend with spoon just until combined.  Pour into a greased 8X8 pan.

Bake at 350 degrees for 20-25 minutes.  Let cool for a bit in the pan, then turn out onto a plate then onto another plate.  Serve with freshly whipped cream or powdered sugar.
