Cold Weather Breakfast to Warm the Heart

It's 20F out this morning (10F in Houghton), one of this year's colder days.  I wanted something warm and spicy this morning knowing that I was going out to run hills near our house in a few hours. 

This is breakfast for 3 - so 6 eggs and a slice of Velveta,  a cheese food product.  No telling what that is but it sure tastes good with eggs.  I whisk the eggs in a small bowl using a fork and a splash of water until thoroughly combined.  Heat a pan over medium-high heat with a bit of olive oil.  Pour in eggs, lay cheese pieces on top and don't be in a hurry to disturb the mixture.  Let it cook for a minute or 2.

I don't continuously stir my scrambled eggs, which makes them crumbly, I prefer mine more omelet style.  Turn over big chunks with a spatula which gives it a nice crispy crust.

coffee - drink it all morning, then switch to green tea, and finally water by dinner
