Mutant Zuchini Parmesan

Slice green tomatoes and mutant squash into 1/2 inch thick slices.

In a pie pan, stir together 1/2 cup of bread crumbs, 1/2 cup of white flour, 1/2 cup of parmesan, paprika, salt and pepper.  In another pan, whisk an egg and 1/2 cup of milk.  Dip veggie slices into the milk mixture then at least one side into the flour-cheese mixture.  Lay in a single layer on an oiled sheet pan.  I used 3 large pans plus had a few slices of zuchini left over.

Bake at 350F for 20 minutes, flip and bake for another 15 minutes or until crispy brown.  Flip again and top with a bit of mozzarella cheese.  Broil for a few minutes until bubbly.

Serve with pasta sauce.
