Bananas dipped in chocolate topped with cherry sauce |
Every now and then, we find some food in the dry storage area of our basement that we had forgotten about. It may have been pushed too far back or gotten hidden under something else. This weekend, we discovered a few pounds of dried cherries - that had expired last month! Time for some creativity and inspiration.

Bananas cut into chunks, spread onto a sheet pan covered with was paper and place in the freezer for an hour |
Simmer 2 cups of dried cherries in a small sauce pan with 2 cups of water over low heat for about an hours. When cherries are nice an plump, pour the mixture into a blender and puree until smooth.

Melt 2 cups of dark chocolate chips in the microwave |

Coat frozen banana pieces in the melted chocolate then return bananas to the fridge until ready to serve |

I had some extra chocolate left over which I spread into a thin sheet and covered with walnuts and dried cherries.
