Sweet potato chips and dipping sauce |
The secret sauce comes from a local vegetarian restaurant - Seva. We had to go a few times before one of the waitresses spilled the beans - mayo and Clancy's Fancy hot sauce.....huhhh...Seva deep fries sweet potato fries. Today I made "chips" to go along with the sauce. I prefer my sauce made with sour cream and naturally Craig prefers his with mayo. Today was mayo day.

On medium sweet potato, high heat oil and a mandolin |
I don't recommend the "chip" version unless you have a mandolin to slice a potato so finely and evenly. If not, cut into thin fries and bake a bit longer.
Preheat oven to medium heat - 375F.

1 teaspoon each of salt, pepper, dried garlic powder, onion powder, sugar, and chili powder |
Mix 2 tablespoons of oil, the spices and potato slice. Spread onto sheet pans in a single layer.

Baking took a total of 30 minutes. After about 15 minutes, rotate sheets and flip chips over. Remove some of the smaller, crisper chips to a dish to cool.
