Cranberry Pecan Granola


In a large bowl, combine:
3 cups oats
2 cups pecans
1 cup shredded coconut
1/3 cup raw pumpkin seeds
1/2 cup veggie oil
1/3 cup packed brown sugar
1/4 cup honey
pinch of salt
pinch of cinnamon

Dry ingredients
Stir with a spoon until combined.  Spread out onto a large sheet pan.  Bake for 30 minutes at 375F, stirring occasionally, until starting to lightly brown.

Remove from oven and stir in 2 cups of dried cranberries.  Place pan on rack and allow to cool.  Store in an air tight container.

Just out of the oven with cranberries added to mix.  Cooling and clumping on a rack.
I included an Amazon link to Back to Nature Cranberry Pecan Granola but I'm pretty sure mine doesn't cost nearly as much to make and our house smells fantastic.  This is an easy recipe.  Mix a few things, bake in oven, then add dried fruit.  It's also a flexible recipe, add whatever nuts and seeds you like and when baked, add whatever dried fruit, or a combination, that you prefer.  I was going with a Fall-Thanksgiving theme for this batch. 

We eat this with milk or yogurt for breakfast, as a snack, or a topping for ice cream.  It's wonderful.
