I substituted parsley for mint and added more coconut milk - loved the sauce. It's not the most attractive color but packed full of flavor - onion, garlic, ginger, parsley, cilantro, garam masala, cumin, lime etc. As you can imagine, the kids howled...and then they realized there were pizza puffs on the table and all was well.
