| Marginal apples - an opportunity! |
The boys brought home some apples the other day. They didn't look that good for just eating so I turned them into applesauce using the Vitamix. I've made applesauce for years but scrupulously peeled the apples - what was I thinking? The Vitamix quickly turns quartered unpeeled apples into a smooth sauce.

For this version, I just quarter the apples, remove any bad spots and throw them in the container. This batch was 8 cups/2 liters worth of quartered apples with a bit of brown sugar, cinnamon, salt, and lemon juice. I added just a splash of water to get the Vitamix turning, then turned to high and blended for a minute until totally smooth.

At this point, it could be served as "raw" applesauce but I prefer to cook the sauce down for a bit on the back of the stove and serve it warm as a desert. It also makes the house smell really nice.

Great recipe, I have loads of apples this year from my trees in my back yard, and I'm always looking for cool recipes that i can use them up with. This is such a wonderful and simple way of making applesauce.
