Quick Whole Wheat Bread Using A Vitamix

Using a Vitamix 5200 with dry-grinding cannister is a great way to add whole grains to your family's diet.  I've doubled the original recipe from the Vitamix Recipe Binder and made some modifications.

For 2 4X8 loaves

Grind 700 grams in a Vitamix dry-grind cannister and turn into flour (two batches, cool between batches).
Dump flour into a large mixing bowl.  Add 2 tbls of instant dry yeast, 2 tsp salt, 2 tbls honey, 1 cup of wheat gluten, 2 tbls olive oil.  Slowly add in 2 1/2 cups warm water and stir with a wooden spoon.

Dump out onto a flat surface and kneed until smooth.  Divide into 2 portions and place into 2 bread pans prepared with Pam spray.

Cover with plastic wrap and let rise for about 1.5 hours or until the dough rises above rim by about 1/2 inch.

Heat oven to 350 degrees F.

Bake loaves for about 35 minutes or until deep brown and sound hollow when rapped on the underside with knuckles.
