| Sauerkraut, potatoes and smoked sausage |
This is the last of the Dutch favorite postings for the week - my parents are heading home.
This particular dish probably has some Wiki history but I haven't checked it out yet. If I had to guess, it's probably a popular dish in cold climates since it combines potatoes, cured meat, and preserved veggies - something hearty for the long winter months before refrigeration.

Ingredients
4 pounds potatoes
8 ounces bacon
smoked sausage
large jar of sauerkraut

| Preparing to boil peeled potatoes in a large pot. Cover potatoes with just enough water to cover |

| slice bacon into little pieces |

| Fry little pieces of bacon until crisp |
 |
| Drain and rinse sauerkraut |
 |
| When potatoes are soft, add drained sauerkraut on top, cover and let steam with heat off |
 |
| Bacon is almost ready |
 |
| Heat sausage per package directions |
 |
| When it's all soft, cooked, and crispy - drain potatoes and kraut, reserving the cooking water |
 |
| Start stirring and mashing the potatoes and kraut |
 |
| Add the bacon and grease - continue to mash and stir, add some of the reserved water if needed |
 |
| Turn potatoes out into a large serving bowl and heated sausage on top |

This meal hit the spot last night, especially since we were out sledding in the afternoon. As we were preparing the meal, a good friend dropped off a huge chunk of traditional English Christmas Cake - the perfect end to a perfect meal and the last meal of a wonderful family gathering.
