Almond Cake

Almond cake made with 3 ingredients - almonds, eggs, sugar

I made an almond cake this afternoon from a recipe I saw at The Stone Soup blog here http://thestonesoup.com/blog/2010/07/the-english-speaking-world-guide-to-cream-a-3-ingredient-cake/

To make the almond flour, I used my Vitamix 5200 and then switched to 2 glass bowls.  The results were amazing - a cake with three ingredients that tasted fantastic.

Since we had pizza buffet for lunch, I used the Vitamix to make a quick garden fresh tomato-vegetable soup and peach-banana smoothie for dinner and the almond cake for desert.

A great ending to a great day.
