Sweet Potato Apple Peanut Soup

Sweet Potato Apple Peanut Soup
I still had a few wood stove-baked sweet potatoes in the fridge which needed using up.  I whipped this up at the last minute and will definitely make it again.  While I haven't done the nutritional analysis, I"m thinking it's very healthy as it includes both the skins from the potato and apple, nothing wasted.  If you haven't go a cooked sweet potato, clean and roast one in the oven alongside something else or quick boil one.

Ingredients
1 roasted/baked sweet potato with skin
1 red apple
1/4 cup salsa
4 tablespoons peanuts
1 tsp chili powder
1 tsp curry powder
1 tsp salt

Combine all ingredients in a blender plus about 2 cups water.  Add a bit more water if blender stalls.  This will measure about 5 cups total.

Pour soup in a sauce pan and simmer and reseason. About 5 servings, 1 cup each





This was incredibly thick and delicious, spicy-sweet.  And the best part - super easy!
