Roasted pumpkin seeds |
Over the weekend, I ended up with a pie pumpkin and a zucchini of some kind.
I'm preparing the pumpkin for pie, roasted seeds and zucchini parmesan.
For the roasted pumpkin seeds, preheat oven to 350F, scrape the seeds out of a split pumpkin, rinse, and dry.
Place cleaned seeds on a sheet pan, add a swig of oil, sprinkle with kosher salt, pepper and chili powder (optional but provides a nice bite of flavor).
Roast in the oven for 10 minutes, stir around and roast another 10 minutes. Remove from pan and enjoy!
