Recycled Dinner Left-Overs

Refried bean burritos for tomorrow's lunches
I love it when there is enough left-overs from dinner to make lunches for the kids. 

Wednesday is Mexican Dinner Night and that usually means left over refried beans.  We buy dried organic pinto beans by the 50 pound sack from either Eden Food or Whole Foods.  I soak a few cups on Tuesday night and quickly cook them Wednesday night in the pressure cooker for a Mexican Fiesta. 

Tonight we had a romaine salad, flour torillas, chips, salsa (thanks Elmer!), olives, sour cream, cheddar cheese, smoothie, and oatmeal bars.

The kids will have a bean, cheese, salad burrito for lunch on Thursday.
